Here is a recipe for Italian meatballs that won a cooking contest that I helped input. The prize for the winner was a limo for the night for friends and family and a trip to San Francisco for a first-class Italian restaurant called Fior d'Italy. If you have a recipe for a dish that you love, you should think of entering a cooking contest. There are thousands of cooking competitions around the United States.

Here's my Italian meatball recipe. The recipe that the prize is won, "rigatoni with meatballs and raisins topped with a Portabella mushroom Marsala sauce with fresh tomatoes."

Chef Vinny's Italian meatballs

2 pounds ground beef (ground or regular) do not lean

2 tsp salt or more if you like

3 large cloves garlic, minced

4Eggs

1 teaspoon crushed dried basil

½ teaspoon dried oregano, minced

½ teaspoon black pepper

¼ cup chopped fresh parsley

¼ - ½ cup bread crumbs level

¼ cup freshly grated Parmigiano Reggiano or Romano

(Optional) ¼ cup raisins make great tasting cakes!

Mix together in large bowl with your hands and form meatballs. Place on a baking sheet and bake at 350 degrees for 15-20 minutes or until golden brown and easily fixed. Notcook.

When you're done, you store all your favorite meatballs in tomato sauce and pasta and cook over medium heat until the meatballs are cooked the whole way. Serve with your favorite pasta. Have fun!
